Gov't urged to collaborate with Departments

The Head of Home Economics Department of the University of Education, Winneba, Dr. Phyllis Forster has asked the Ministries of Tourism, Cultural and Chieftaincy Affairs to collaborate with the department to run refresher courses for caterers and food vendors, to make food preparation safe for consumers. He said this at the second food exhibition of the department on food recipe development, in Winneba. The one-day food bazaar formed part of the end of semester examinations of the level 300 students of the department. It afforded the students from all the 10 regions of Ghana, the opportunity to showcase their lesser-known food items and dishes. Dr. Phillis noted with concern that the method of food preparation in the country was not the best and this stemmed from the fact that most caterers and hoteliers lacked nutritional information. A lecturer in charge of Recipe Development, Preservation and Storage, of the department, Mrs. Comfort Maddah expressed concern about some unwholesome foreign foods which find their way onto the Ghanaian market. She charged the Food and Drugs Board (FDB) to step up their monitoring activities and flush out such unwanted food from the market. Mrs. Maddah therefore advised caterers to improve upon their food content by adding different food additives to make locally prepared foods more attractive and appetizing. The Dean of the Faculty of Science, Dr. Koku Amedeke charged the department to take a critical look at the health and nutritional aspects of the recipes they have developed. The Pro Vice-Chancellor of the University, Prof. Muwtor Avoke who chaired the function, urged the department not to allow their recipes to get rotten in their libraries, but introduce them unto the Ghanaian market to benefit the nation and tourists.
